School Lunchbox Dad’s easy 4 ingredient recipe for pizza scrolls
The perfect back-to-school lunch.

Pizza Scrolls for the kids’ lunchboxes are always a hit. I always batch-cook these and freeze them for later use as the girls’ midweek lunch.
This is a great way to save time and money, as well as ensure you’ve always got delicious (and quick, last-minute) lunchbox options on hand for months after!
Pizza scrolls recipe
Ingredients
● 2 sheets of frozen puff pastry, thawed
● 3 tablespoons tomato paste
● ½ cup of grated mozzarella
● Small handful of basil leaves (optional)
Method
1. Using a knife or pizza cutter, cut each pastry into five even rectangular strips.
2. Grab a teaspoon and place a dollop of tomato paste in the centre of each pastry strip before using the back of the spoon to evenly spread the paste over the strips. Avoid getting too close to the edges of the pastry.
3. Sprinkle the mozzarella along the centre of each pastry strip and add the basil leaves if you like.

4. Now, for the folding and rolling. Don’t stress, it’s easier than it sounds. Fold the pastry strips in half lengthways to enclose the ingredients.
5. Roll up the strips until you have created 10 of the most delicious pizza scrolls. You can even get the kids to help out.
6. Line the base of your baking tray and pop the scrolls into oven. Cook on fan/ bake 185C for 15 minutes or until golden brown.
7. Allow the scrolls to cool then, pack them into lunchboxes or put them in an airtight container where they can sit in the freezer for up to 2 months.
