Tiny Teddy beach cake

Prep time: 30 mins
Fridge time: 5 hrs+
Make a splash and take your birthday party to the beach with this fun sea-side cake, complete with biscuit crumb sand and blue jelly water.
Biscuit base
- 250g pkt Arnott’s Milk Arrowroot biscuits
- 150g butter, melted
Lemon filling
- 395g can sweetened condensed milk
- ½ cup (125ml) lemon juice
- 1½ tsp gelatine powder
- ½ cup (125ml) boiling water
Jelly layer
- 2 x 85g pkt Berry Blue jelly
To decorate
- Arnott’s Tiny Teddy – Honey biscuits
- Arnott’s Tiny Teddy – Chocolate biscuits
- Jelly rings, sour straps and cocktail umbrellas
Method
- Grease and line a 20cm (base measure) springform tin with baking paper.
- Biscuit base: Place Milk Arrowroot biscuits in the bowl of food processor and pulse until fine crumbs form. Add melted butter and pulse until combined. Reserve ⅓ cup crumb mixture. Press remaining mixture firmly into base of tin. Cover and refrigerate for 20 minutes or until firm.
- Lemon filling: In a bowl, combine condensed milk and lemon juice, stir well. Combine gelatine and boiling water in a small jug; stir until gelatine dissolves. Cool slightly. Pour gelatine mixture into condensed milk mixture and stir well. Pour filling over biscuit base. Cover and refrigerate for 3 hours or until set.
- Jelly layer: Meanwhile, prepare jelly according to packet instructions, using 200ml less cold water than directed. Stand 30 minutes at room temperature to cool. When slightly thickened, pour mixture over set filling (see tip).
- Cover and refrigerate for a further 2 hours or until jelly is set. When ready to decorate, remove cake from tin and transfer to a serving board. Scatter reserved crumbs on one side of jelly and on board for sand. Arrange Tiny Teddy biscuits, jelly rings, sour straps and umbrellas as shown.
A tip from Chef Ness
Pour jelly over the back of a spoon when pouring it over the lemon filling to ensure a smooth base.
